Burritos make the world go round!


I am what you would call a plain Jane.  The simplest things can make me so happy.  That is why my absolute favorite dish is homemade bean and cheese burritos.  I love Mexican food like tamales, tacos and enchiladas, but I am not nearly skilled enough to make them on my own so we make simple yet delicious burritos.  My dad and me have been making these together for years and they are so special.  I get so excited when we decide to make them.  All that is incorporated in the burritos are refried beans, cheddar cheese, avocado and salsa.  The special ingredient we use is Lawry's taco meat seasoning.  



I know you are thinking what meat, she said they were bean and cheese.  Well we put the seasoning in the beans just to add a little more spice.  We just discovered this about six months ago and are never going back.  My dad and me have a routine to making our burritos.  I warm up the tortillas, cut the avocados and get all the condiments out.  He cooks the beans and grates the cheese.  (I can't cook the beans because of the fact that when it comes out of the can it takes the shape and reminds me of dog food.)  It is interesting to me how traditions evolve.  My boyfriend has moved in with us and now him and me do the cooking.  He takes my dads responsibilities and I do the same preparations.  But now we just let my dad know when it's ready and he just comes and eats, and he gets the lucky job of cleaning up because we did all the hard work.  I am not a very adventurous eater and that is why I am so happy with such simple dishes.  But this is a dish that I think one day I will make for my children.
